Ms.Chulaluck Charunuch Mr.Worapol Pengpinit Mrs.Amonrat Duangchampa, from Kasetsart University's Institute of Food Research and Product Development developed "Nu Munchees," or a healthy snack that uses mung bean as a main ingredient and adds more benefits by adding Spirulina to create a high-in-protein healthy snack product. This snack made of roasted mung beans with Spirulina in a nori seaweed flavor is excellent for people of all ages. It contains protein from mung beans and Spirulina. It also has different nutrients than other snacks on the market, which frequently consist largely of carbohydrates. The major ingredient is split mung beans, which are complemented with Spirulina to assist improve the remarkable nutritional value. Spirulina is a type of small blue-green algae made up of cylindrical cells that are unbranched and twisted into a spiral. It is a plant with excellent nutritional value, particularly protein and all essential amino acids for health. It is the raw ingredient that gives the developed products their complete health qualities. Furthermore, the dark green color of Spirulina affects the color of the product. It produces a natural light green tint, which is a key component of the product and also makes it more acceptable and appealing to consumers. Nu Munchees' manufacturing technique uses extrusion production technology, which involves putting various ingredients into an extruder machine and drying them in a hot air oven. Furthermore, it can be coated to add diverse fragrances and flavors by baking rather than frying. According to the product name "Nu Munchees," which means Nutritious snacks (Nu from Nutrition and Munchees from Munchy, which means snacks), these are techniques to create a new type of mung bean snack product with color, texture, and crispy taste that is fun to eat, chew, and satisfy consumers. As a result, the product may be stored for a long time and is compatible with today's health-conscious trend.
